To kickoff O-Week, we had a welcome reception for the first years and their family.
Welcome Reception Menu:
- Scones [Smitten Kitchen] – 12 batches
- Pumpkin Cake [Smitten Kitchen] – 3 loaves
- Applesauce Cake – 3 loaves
I can’t remember what mix-ins we did for the scones, however I believe we made chocolate chip scones, cranberry scones, and lemon scones. We also generally serve the scones with whipped cream.
The recipe for pumpkin cake was originally for pumpkin muffins, however we put the batter in loaf pans instead and baked them at 350 degrees Fahrenheit for 35-45 minutes to make them into pumpkin cake.
Additionally, the applesauce cake was a recipe from Sarah:
- ½ cup margarine
- ½ sugar
- ⅔ brown sugar
- 1 cup applesauce
- 2 cups flour
- 1 tsp baking soda
- ½ tsp salt
- 1 tsp cinnamon
- 1 tsp all spice
- 1 tsp vanilla
- Mix wet ingredients
- Mix dry ingredients
- Bake at 350 degrees Fahrenheit for 35-45 minutes
It was exciting to finally meet the first years! They’re so cute, and it’s hard to believe it’s already been two years since I was in their shoes.
